Pimientos de Padrón

A delicious chili pepper to cook with. This allround pepper originates from Galicia in Spain. Pimientos de Padron is often used for tapas. They are fried in olive oil and sea salt. They colour from light green to red during ripening. From this pepper it's known that not all are equally hot. Most of them are hot, some have little heat. The longer they mature the hotter they will become. For a mild tapas, harvest the young green peppers.
