Pasilla Bajio
Pasilla means "little raisin" in Spanish, referring to the dark brown color and raisin-like aroma of the dried pepper. With its rich, smoky flavor and medium sharpness, the dried pepper is often used in Mexican mole sauces. The green peppers are also used in dishes and then called Chilaca. The peppers turn from a dark green color to dark brown and almost black when ripe and can grow longer than 20 cm.
