Guajillo
The Guajillo (“gwah-hee-oh") is a very popular chili pepper in Mexico. The pods are between 10 and 15 cm long with a diameter of about 2.5 – 3 cm. They are reddish brown and when dried they turn black. This chili pepper dries well because of its thin fruit wall. The chili peppers have an erect habit. In Mexico, the Guajillo pepper is often used in salsas and sauces. It’s also used to make chili pastes. In Tunisia this paste is called Harissa. The Guajillo has a sweet taste and is medium hot.
