The Costeno Amarillo originates from Mexico. The peppers are about 5 to 8 cm long and 2 to 2.5 cm in diameter. The peppers color from green to yellow-orange and have a thin fruit wall, making it easy to dry. They have a nice lemon citrus flavor and are delicious in soups, salads, stews and stir-fries. The dried chilies are used for making yellow mole sauces.
