The Aji Red or Aji Rojo originates from Peru. The plant is about 90 cm tall. The hot pods are about 15 cm long and 2.5 cm wide. They color from green to chocolate brown and finally to red. The Aji Red is excellent for drying. Usually the dried pods are grinded into powder for use in sauces and stews.
